Martin is going to be cooking up fresh pasta daily and other Italian American dishes such as chicken parmesan and lasagna.

“Our concept centers entirely around fresh homemade pasta. It elevates eating pasta to a higher level, compared to store bought dried pasta. Cavatelli is the name of a unique pasta shape, and we’ve incorporated cavatelli pasta into entree dishes, side dishes with broccolini and cold pasta salads,” Martin said.

The eatery will be at 175 S. Nova Rd and is roughly 2,800 square feet. The concept has been in development for several years, Martin said. He even adjusted it, adapting to a new post-COVID economy.

The eatery will serve higher-end dishes but in a fast-casual setting, where guests can order at the counter and staff will deliver meals tableside, Martin said.

He also said, Cavatelli Pasta Kitchen will also offer carry-out and online ordering.

According to the National Restaurant Association, 66% of consumers are more likely to order takeout than they were in 2019, per the State of the Restaurant Industry 2023 report.

The same report also mentioned that customers expect to be able to use technology to order or pay at eateries.

Meanwhile, Martin said even in this fast-casual format the interior of the restaurant will be high-end, and even feature a beer and wine bar for guests to sit at.

Right now, the goal is to open six days a week, being closed on Sundays. It does not have immediate plans to expand but is cautiously looking to add more locations across Volusia County, such as in DeLand and Port Orange.
