LAKE BUENA VISTA, Fla. – As Walt Disney World Swan and Dolphin Resort is undergoing a $275 million transformation, announcements of new additions are starting to trickle in, the latest — a steakhouse.
On Wednesday, a Las Vegas-based restaurant company, The MINA Group, revealed in a news release that its restaurant Bourbon Steak will be opening at the resort in mid-summer.

The restaurant group was founded by James Beard Award-winning chef Michael Mina. He has established himself in the culinary world by opening more than 30 restaurants across the country, winning the prestigious Michelin star, and even cooking for three U.S. Presidents.

“The Walt Disney World Swan and Dolphin is the ideal location for Bourbon Steak,” Mina said in a prepared statement. “Their strong commitment to culinary excellence aligns perfectly with our vision at The Mina Group. We see it as an ideal partnership, and I look forward to spending time with the local team to realize this dynamic new project.”
Bourbon Steak will replace Shula’s Steakhouse inside the Walt Disney World Dolphin hotel. Reservations for Shula’s will be available until June 14, according to a news release.
Meanwhile, this marks the tenth Bourbon Steak location to open across the U.S., but the third in Florida, as it has one in Delray Beach and Miami.
The restaurant offers multiple items such as, shrimp cocktail, caviar, scallops, lobster pot pie, Chilean seabass and whole roasted chicken. It also has different cuts and types of steak from a filet mignon, bone-in ribeye and Japanese wagyu, according to its website.
“Each Bourbon Steak is uniquely designed to represent the environment it is in, and I’m excited to unveil what we have in store for Orlando,” Mina said in a prepared statement.
