Michelin-starred chef whips up menu for Orlando-bound food truck

Food truck officially debuts Feb. 23

ORLANDO, Fla. – Pacchioni’s World Inspired Cheesesteaks Food Truck has rolled into the Central Florida food scene as it prepared for its grand opening on Feb.23.

Daniel Pacchioni, who calls himself a ‘professional curious person’ is behind this truck, and he teamed up with Orlando chef Mike Collantes to craft the menu, according to a news release.

“Working with Chef Mike Collantes is a dream come true. I’ve been a fan of Soseki for years, by far one of my favorite restaurants in Orlando, and this is what gave me the confidence to open up this elevated cheesesteak concept. I wouldn’t be here if it wasn’t for him,” Pacchioni said in a statement.

Collantes earned a Michelin Star in 2022 for his omakase restaurant Soseki in Winter Park. He has since earned other nods from the prestigious brand – such as a Bib Gourmand award in 2024 for his other eatery, Sushi Saint.

Meanwhile, this food truck will serve different types of cheesesteaks, from the classic inspired by Philadelphia that is topped with Cheez whiz and provolone cheese, to a Jamaican-inspired one that has jerk seasoning and house made curry aioli.

“Whether guests are craving a classic or an international fusion, our mobile eatery is redefining what a cheesesteak can be,” Pacchioni said in a prepared statement.

He said this food truck was inspired by Sunday dinners with his fiancé‘s family who is from Philadelphia and trips he took with his mom around the world, according to a news release.

He also mentioned that there are plans to open brick-and-motor locations for this brand in the future, but did not reveal a timeline, according to the release.

The truck is in its ‘soft-opening’ phase with its next appearance on Friday at Market on Fifth in Apopka off 40 E. 5th St., per its website.

Its official debut will be at the Faire of The Dog event in Orlando’s Mills District at 1042 N. Mills Ave.
